Pickle Day

While we were on vacation, our garden exploded. Seriously — see?

We just harvested three baskets of salad mix. Three baskets. And a ton of zucchini. And… way more cucumbers than we will ever be able to eat!

The obvious solution to our abundance of cucumbers is to make pickles. Let me just say… I have never made pickled anything before. After doing some research, I decided that our best bet for a first pickle attempt is to go with making “refrigerator pickles”. Why? Because the other methods just seem kind of scary, that’s why!

So, we began the process.

It really didn’t take all that long to get everything sliced up, because I have an awesome helper.

Before long, we had all the jars filled.

The final product? I won’t know how they are for a day or two. I do know they smell really good. Fingers crossed!

    If you have an abundance of zucchini, keep in mind that August 8th is Sneak Some Zucchini Onto Your Neighbor’s Porch Night. I celebrate annually. πŸ˜‰

  2. Awesome! We got absolutely no cucumbers when we tried to grow some last year. How that is possible, I don’t know, but we somehow managed it. Even the zucchini didn’t produce more than three skimpy little offerings before it died. We didn’t bother with a garden this year. 😦

    1. I think a lot of it for us is that our yard is completely full sun. It was literally a case of sowing seeds and they just took off. Our peppers have been slow going until this week — they’ve suddenly decided it’s time to take off. Lots of tomatoes on their way, too. I’m sorry you didn’t get the garden going this year, Kerry. I can send you some cucumbers! πŸ˜‰

      1. I’d take ’em! πŸ™‚ I’ve been wanting to try making fermented pickles. I’ve thought about making refrigerator pickles, but most of the recipes I’ve seen for them all seem to have a lot of sugar in them, which doesn’t sound very appealing to me.
